This cake is very popular at tea time in New Zealand and consists of a thin base layer of cake crumbs or cookies with raspberry or plum jam and coconut meringue. It is necessary to mention that the recipe varies minimally in each region.

  • 250g of softened butter
  • 4 large egg yolks
  • 1 cup  of jam for filling
  • 1½ cups of sugar
  • 3 cups of flour
  • 1 tsp of vanilla extract
  • 2 tsp of baking powder

Coconut Meringue Topping:

  • 4 large eggs
  • 2 cups of thread coconut
  • 1 cup of sugar
  • ½ tsp of vanilla extract


Firstly, you must preheat the oven to 160 °C and cover a container with baking paper.

Next, you should beat the butter and sugar until they are creamy. Mix the egg yolks and vanilla, and then add the flour and baking powder to make a dough. Put the dough in the bowl and bake it approximately 20 minutes.

Then, while the dough is in the oven, you must cook the meringue. Put the eggs in a bowl and whisk them. Beat the sugar until the mixture forms a bright meringue and add the coconut and vanilla.

Finally, let the dough cool and then spread it with jam and cover it with coconut meringue topping. Then, you should bake until crisp and lightly browned (about 35 minutes). Please, cut into about 25 pieces and it’s ready to eat!
